Wine Tasting at Adare Manor
Explore our exceptional wine cellar! Adare Manor has a gem of a fine wine cellar, a gorgeously atmospheric setting in which to experience flavours from new wines of which you may never have heard to famous old bottles renowned the world over. An ever-expanding collection of wines from all around the globe, there are over 750 wines available at Adare Manor, a number of which are some of the rarest bottles available such as, for example, Château Lynch-Bages 1945, Colares 1934 or Biondi-Santi 1968.
Wine Cellar
The original Dunraven wine cellars at Adare Manor have been converted into a space designed exclusively for private wine tastings and dining. Accessed by a discreet passage door hidden in the scullery kitchen, the walls of the 18m-long Wine Cellar are flanked with wine storage encased in dark oak shelving, and decorated at the far end with an antique aged, smoked mirror. The original brickwork on the vaulted ceiling above was sandblasted and restored, while a ceiling light with a bronze track runs the length of the table creating atmospheric pools of light on the marble below.

Sommelier
For Adare Manor’s sommeliers, having an immaculate understanding of wines, and where they come from, is utterly integral to their personality. An excellent palette is not something you are necessarily born with. To become an eminent sommelier requires considerable stamina and absolute dedication, a passion for learning about geology and nature and an aptitude for memorising flavours and names through blind-tastings and constant study. Our sommeliers are a fountain of knowledge when it comes to wines and is always eager to educate and guide every guest. Allow them to take you on a journey sampling some of these impressive vintages, in a personalised tasting to suit your palate.

Each guided tasting will bring you on a specialty curated journey and transport you to the vineyards of the beloved wine lands. SENSORY EXPLORATION
Learn about the physiology of taste and how to evaluate acidity, tannins, residual sugar and other structural elements of wine. Start building your wine description vocabulary. Gain confidence in knowing and describing the wines you like. This tasting is designed to give you great basic knowledge, whilst also being an enjoyable experience, whether it is your first wine tasting or you want to further develop the practice of tasting wines. The tasting of six wines will focus on the structure of wine, various styles and main grape varieties.
HIDDEN TREASURES
Discover wines and regions that embody exceptional quality, unique flavours and captivating history. This tasting will give you enough insight so you are not only able to spot the hidden gem on any wine list, but you will also have the ability to impress any wine connoisseur! This tasting of five wines will focus on the history and local varieties of these hidden treasures.
TIME WILL TELL
Delve into the ageing process of wine. Learn the simple rules for successful ageing and discover the ageing timeframes of different wines. Explore the various vessel types used in the ageing process and the impacts these have on the flavour and perception of the wine itself. This tasting will take you on a journey through the decades. We will start with a developing wine and move through various decades until we reach our final wine, which is dated back to the previous century. The tasting of five wines will focus on the ageing process and the evolution of aroma over time.
INSIDE BURGUNDY
Surrender yourself to the complexity of wines from the most sought after wine region in the world. Are you a Chambolle or a Gevry wine lover? What is the difference between Chassange-Montrachet and Montrachet itself? These are the questions we will look to answer, along with discovering which commune you should gravitate towards in the future based on your palate. This tasting of five wines will clarify Burgundian wine law, the stylistic differences between villages and the value of wines from this region.
